Banana Chocolate Chip Muffins

I have made this recipe so many times, I almost don't need to look at a recipe anymore.  Jay dug this recipe up online years ago, and it has since become a family favorite.  Using butter as the fat source gives these muffins a nice crisp outside and with the banana they are never dry inside.  I often double the recipe to make 2 dozen muffins.  I find it easiest to mix up this batter with a Kitchen Aid mixer, but I imagine a hand held mixer would also work. 1/2 cup butter, softened 1 tsp vanilla 3/4 cup of sugar 2 eggs 2 cups of all purpose flour 1 tsp salt 1 tsp baking soda 1 tsp cinnamon (optional) 1 cup of mashed ripe banana (about 2 med-large bananas) 3/4 cup of chocolate chips Preheat oven to 350F.  Spray muffin tin generously with non stick spray (I don't like using muffin liners, but if you do, you can skip this step and use liners instead).  In a large bowl cream butter and sugar until well mixed.  Add each egg individually and mix until well combined.  Mix
